How to Make the Giant Gelatin Balls

🧪 Ingredients:

  • Water — 1 cup (8 fl oz / 240 ml)
  • Powdered gelatin — 2½ tablespoons (about 25 g)
  • Sugar — 2 to 3 tablespoons (adjust to taste)
  • Black food coloring — as needed (gel or powder for deep color)
  • Activated charcoal (optional, for a matte, rich black tone) — ½ teaspoon
  • Natural flavoring (vanilla, mint, coconut, etc.) — to taste
  • Silicone half-sphere molds (3-inch diameter) — 2 halves per ball

🛠 Tools:

  • Small saucepan
  • Whisk
  • Silicone spatula
  • Dropper or spoon (for sealing the halves)
  • Sharp knife or kitchen scissors (optional, for trimming seams)
  • Refrigerator

Make the gelatin base:
  • Pour ⅓ cup cold water into a bowl and sprinkle in the gelatin. Let it bloom for about 10 minutes.
  • In a small saucepan, heat the remaining ⅔ cup water until just below boiling (about 160–175°F / 70–80°C).
  • Stir in the sugar, food coloring, and optional activated charcoal. Add your flavoring of choice.
  • Combine the warm mixture with the bloomed gelatin and stir until fully dissolved and smooth — don’t let it boil.
  • Let the mixture cool slightly to around 110–120°F (45–50°C) — perfect for pouring without damaging the mold.

2. Pour into molds:
  • Set up your 3-inch silicone half-sphere molds on a flat tray or plate.
  • Carefully pour the gelatin mixture into each half using a spoon or small funnel. Avoid bubbles.
  • Chill in the refrigerator for 1.5 to 2 hours, or until fully set.

3. Form full spheres:
  • Gently remove each half-sphere from the mold.
  • To seal them into a full ball: warm the flat edge of one half very briefly (e.g., on a warm spoon or over steam), then press it gently against the other half.
  • Hold for 10–15 seconds. The gelatin will “fuse” as it cools.
  • Trim any extra edges with a clean knife if needed.

4. Storage & Serving:
  • Store the finished gelatin balls in a sealed container in the fridge for up to 2 days.
  • Add them to bubble tea right before serving — they look stunning in clear cups.
  • You can poke them with a jumbo straw or cut them in half for a dramatic “bursting” effect.

💡 Pro Tips:Want them shiny? Lightly brush each sphere with a bit of coconut oil before serving.
